Hello everyone, I hope you are all having a great day! Today is beautiful! I did not get to post yesterday so today will incorporate both.
Yesterday for lunch, I made quick and easy Quinoa stuffed red bell peppers.
Ingredients: 1 15 ounce can diced tomatoes, 1 15 ounce can black beans, 1 cup quinoa, 1.5 tablespoons cumin, 1/2 cup diced red onion, 2 red bell peppers, 1 tablespoon olive oil.
I used Near East Roasted Red Pepper and Basil Quinoa, but you can use any kind you like, including plain.
1.) Cook red onion in olive oil over medium heat in medium sized pot ( about 5 minutes)
2.) Add can of tomatoes, reserving juice
3.) Add black beans
3.) Add proper amount of water your Quinoa instructions imply
4.) Cover and simmer on low for 20 minutes (until Quinoa is tender)
5.) Placed reserved tomato juice in the bottom of your pan.
6.) Wash and cut red bell peppers in half discarding the seeds
7.) Place pepper halves in pan on top of tomato juice
8.) Fill each halve with the cooked Quinoa Black Bean mixture
9.) Cover with tin foil and bake at 350 degree F for 40 minutes
Serve it with fresh steamed broccoli and some avocado slices. The perfect balanced clean meal!
Last night, My husband and I went to dinner with another couple to celebrate a birthday. It was great company and food!

Fast forwarding to today...
Before heading to the gym this morning, I threw lunch in the crock pot. I absolutely love making meals in my crock pot as it makes everything so simple. I loaded the crockery with: 2 organic chicken breasts, 1 large diced red onion, 2 cups raw white cabbage, 1 cup radishes, 1 large diced sweet potato, 1 can black beans, 1 can diced red tomatoes, 2 tablespoons cumin and 1 cup organic low sodium chicken broth.
Cook on low for 6.5 hours and it is done!
The hassle of cleaning a crock pot is no more :)
I always place my raw chicken at the bottom, followed by the wet ingredients and diced produce.
My workout this morning was wonderful. I was able to get all my upper body weight training completed and finished with 12 miles on the bike.
