Holy Kale


Hello everyone. I hope you all are having a great day! We are going on three whole days of sunny beautiful weather here and I have been soaking it up! 

Last night, my husband and I went out to celebrate a good friend of ours birthday! He made his own birthday dinner and shared it with all of us. It was delicious! After dinner, we went and listened to a pretty good band at a mexican restaurant downtown. It felt amazing outside!! I am pretty sure I am a 27 year old going on 50 because at 9:00 pm, I was pooped! We all headed home and got a great nights rest.

Since yesterday was so pretty, I decided to bust out some of my bright spring clothes. For anyone that knows me, knows I LOVE bright colors. I am not afraid to wear bright green pants :) They make me happy, not to mention they are so comfortable. You will have to excuse my unstylish foot boot :)

Today for lunch, I made this awesome raw kale salad. It consisted of organic kale, cherry tomatoes, chickpeas, edamame, olive oil, lemon juice, Herbamare seasoning, mint and basil. Here is the recipe I followed as a guideline: Kale and Edamame Bistro Salad



 

I always wash my produce with this product to remove any pesticides, oils and waxes.
 
You can find this at pretty much any local grocery store. It is in the produce aisle. 

To go with this lovely kale salad, I made turkey burgers. Turkey is a perfect lean meat. I use extra lean ground turkey from Jennieo. It is 99% fat free and delicious. I mix my turkey with a chopped red onion, fresh ground pepper, dijon mustard and 2 eggs. These burgers come out so moist!

All you have to do is simply mix all the ingredients in a large bowl and then form patties. In a lightly oiled skillet over medium heat, cook each side for 8 minutes. I cover my skillet with its lid while each side is cooking. This traps in moisture and keeps the burgers themselves from drying out. Always check your meat with a cooking thermometer to confirm its doneness. Turkey should always be cooked to  165 degree internal temperature.

Today is my rest day, so I will be doing some things around the house. How do you feel about your rest day? I wish I did not have to have one! I want to workout everyday! Rest day is like a punishment to me :) Oh well, I will stop complaining! What day do you use for your rest day??
